This easy Kaiserschmarrn recipe is often served with apple sauce, plum compote, jam, and some icing sugar on top.
For everyone who stays at home this year, I have the perfect recipe for you so you can enjoy this skiing holiday favorite at home.
Of course, kaiserschmarrn are not the only typical Austrian winter holiday dish, but it is undoubtedly one of the most popular dishes. They were created in the 19th century for the Austrian Emperor Franz Joseph 1, the husband of Princess Sisi.

To make these delicious, caramelized scrambled pancakes, you need to whip up the egg whites in a separate bowl. Because the egg whites are the only thing that will fluff up the pancake, you need to. Be careful when you mix them into the other ingredients.
Mix the other ingredients in a different bowl and carefully spoon in the egg whites. Melt some butter in a large pan and pour in your batter. Let it bake for a few minutes on low heat until the top of the pancake is dry.
Flip the kaiserschmarrn and bake for another few minutes before tearing it into bite-size pieces with two forks. Sprinkle with some sugar and bake for another few minutes until caramelized.
Equipment
- A large deep skillet to bake the kaiserschmarrn in. I recommend using a cast-iron skillet.
- Two mixing bowls with a whisk or mixer to make the batter.
Storage
Kaiserschmarrn will keep for 2-3 days in an airtight container.

- ½ cup flour
- ¼ cup sugar
- 3 eggs seperated
- 1 ¼ cup milk
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- 2 tablespoons butter
- A pinch of salt

- Whip up the egg whites.
- Add the flour, sugar, salt, egg yolks, vanilla and milk to a large bowl and mix them until you got a smooth batter.
- Carefully fold the egg whites in your batter.
- Heat your butter in a large skillet.
- Pour in your batter and cover the pan.
- Let your kaiserschmarrn bake for about 5-8 minutes or until the bottom turns golden.
- Cut the kaiserschmarrn in 2 or 4 pieces, flip them and let them bake for a few minutes until golden.
- Pull them apart with two forks and let them bake for an additional few minutes.
- Sprinkle the kaiserschmarrn with powdered sugar and serve with some (strawberry)jam and apple sauce.
