This spinach feta salad with apple and honey mustard dressing is the perfect summer salad. This spinach salad is delicious as a quick lunch or as a side at a BBQ.

What I love about this healthy salad is that it is super quick and easy to make. In less than 10 minutes, you have a fantastic meal that you can take with you to work or school.
If you want to take this salad to a picnic or bbq, I recommend putting the dressing in a separate container and drizzling it over the salad just before serving.
Ingredients
Spinach - spinach might not be the first thing you think about when you crave a salad, but this leafy vegetable is an amazing base for a salad. The strong flavor pairs well with the sweetness of the apple and the honey.
Apple - I recommend using a sweet apple like elstar or honey crisp for this salad.
Red onion is optional, but it takes your salad to the next level. Because the onions can be a bit overwhelming, you should cut them into thin slices or use pickled red onions instead.
Honey mustard dressing - honey mustard dressing gives the salad a subtle sweet flavor. You can use a store-bought dressing but homemade dressing tastes so much better.
If you don't like honey, you could substitute this dressing for a balsamic reduction. This dressing gives the salad a sweet, tangy flavor that goes perfectly with the sweetness of the apples.
Feta cheese - feta is a Greek cheese made with sheep's milk. The tangy flavor is perfect for any salad, especially when adding fruit.
Don't love feta as much as I do? No problem! Just use homemade cottage cheese or soft goat's cheese.

Storage
This spinach salad will keep in the fridge for two days. I do recommend adding the dressing when you are ready to serve.
You can toss the apples into some lemon juice to keep them from discoloring.
The honey mustard dressing will keep for about a week in the fridge.
